Coconut Pina Colada Panna Cotta with Pineapple and Lime Recipe

Here’s a sweet, savory and festive dessert that’s sure to show your dinner guests that keto, paleo and low-FODMAP sweet treats can be both healthy and delicious. Recipe creator, Tracey Hatch-Rizzi (@rad foodie) decided to create Coconut Pina Colada Panna Cotta with pineapple and lime, using Ultima Coconut Pina Colada flavored electrolyte powder. She topped it off with a fresh pineapple salsa and toasted coconut for an extra dash of tropical bliss.

Ingredients:

For the panna cotta:

2 cups coconut milk

3 tablespoons low-carb sweetener of choice

1 stickpack Ultima Coconut Pina Colada

2 teaspoons gelatin or agar agar

¼ cup cold water

For the salsa topping:

½ cup chopped pineapple

1 tablespoon lime juice

2 teaspoons sliced mint leaves

1 tablespoon lime zest

¼ cup toasted coconut

Directions:

Bloom the gelatin with the water in a small bowl. Let sit for 5 minutes.

Combine the coconut milk and sweetener in a small saucepan and heat until warm, but not boiling. Turn off the heat and add the electrolytes. Stir until dissolved.

Add the bloomed gelatin to the saucepan and stir until fully dissolved.

Pour into dessert glasses and chill for at least four hours or until set.

In a small pan, sauté the pineapple, lime juice, zest and mint leaves, reserving a pinch of zest and mint for garnish. Sauté until just heated through. Let cool.

Top the panna cotta with the salsa and toasted coconut.

Garnish with reserved zest and mint.
