We are in LOVE with this zero sugar vintage style raspberry vanilla pop! There are few things in life more nostalgic than the taste of an ice-cold soda (with a healthy twist).
What you'll need: (Makes 4 drinks)
- 1 Ultima raspberry stick pack or scoop
- 1/4 cup water
- 1/4 tsp. liquid stevia
- 1 cup fresh raspberries
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- Seltzer water
- 2 cups ice cubes
In a small saucepan, combine the water, liquid stevia and raspberries over medium heat and cook for about 5 minutes until the mixture starts bubbling. Stir and cook the mixture for 5 more minutes until raspberries cook down. Set a fine-mesh strainer over a measuring cup or bowl and strain the mixture, pressing down on the raspberry pulp to squeeze out all the juice. Add the Ultima Raspberry stick pack (or scoop), lemon juice, and vanilla extract and put in the fridge to chill. Fill each glass with ice and add 2-3 tbsp of the raspberry syrup and add about a cup of seltzer water. Serve, sip & enjoy!
