Pumpkin Spice Donuts with Ultima Orange Glaze 🎃
You guessed it, it's PSL time! While we love the iconic Pumpkin Spice Latte, we won’t deny eying all those donuts while waiting in line for our morning coffee. We set out to create a healthy version just as delicious, but with none of the sugar. So we turned to the extraordinary talents of @ketofocus for some inspiration and recipe development. Here is our very own vegan/keto Pumpkin Spice Donut recipe made with Ultima Replenisher Orange Glaze. Sooooo, good. (If you make this recipe, tag us @goultima and share your creation with us!)
For the Donuts: 🍩
- 2 cups almond flour
- 1/2 cup unflavored or vanilla vegan protein powder
- 2 tbsp. monkfruit sweetener
- 2 ½ tsp. baking powder
- 2 tsp. xanthan gum
- 1 tsp. salt
- ½ tsp. pumpkin spice
- 1/2 cup coconut oil, melted
- 1/4 cup pumpkin puree
- 1/4 cup hot water
For the Ultima Orange Glaze: 🍊
- 1/2 cup powdered erythritol
- 3 tbsp. coconut milk 🥥
- 1 serving Ultima Replenisher Orange flavored electrolyte powder
Preheat oven to 325°F degrees. Spray a donut pan with cooking oil. Add all the dry ingredients for the donuts to a medium bowl. Mix until combined. Add in wet ingredients. Mix until combined. Grab a handful of dough and press it into a donut pan. Add enough dough to reach almost the top of the rim. Bake at 325°F degrees Fahrenheit for 10 minutes or until the donuts are set and lightly brown around the edges. Let cool completely in the donut baking tray then transfer to a wire rack.
To make the orange glaze, add powdered erythritol, coconut milk and one scoop Ultima Orange Drink Mix to a small bowl. Microwave for 20 seconds to get a thin consistency. Dip the top of your donut into the glaze and place on a wire rack to set.
Makes 8 donuts.
