The Cherry Pom Tiki (Zero Sugar, Low Carb)

We're always looking for ways to make our favorite foods and drinks a lot healthier. So we teamed up with @drinksbyjess to rethink the classic (overly sweet) Pom Tiki cocktail recipe and make it good for you! 

Now you can indulge in this amazing, mouthwateringly flavorful, sweet, low carb, no sugar, cocktail loaded with electrolytes and vitamin C. So perfect for the holidays. Your taste buds can thank us later!

Makes 1 serving

Ingredients:

  • 3 servings Ultima Cherry Pomegranate
  • 2 oz spiced rum
  • ¾ monkfruit sweetener (or keto sweetener of choice)
  • 1 cup filtered water
  • ⅛ teaspoons xanthan gum (to thicken)
  • 1 teaspoon pomegranate seeds
  • 2 oz spiced rum
  • 2 drops almond extract
  • 1 oz fresh lemon juice
  • ½ orange juice (fresh squeezed, if possible)
  • 1 oz fresh squeezed lemon juice
  • Ice
  • 1-2 cherries (for garnish)

Directions:

For the Simple Syrup: Bring monkfruit sweetener (or keto sweetener of choice), Ultima Cherry Pomegranate and filtered water to a boil over medium heat, whisk in xanthan gum and chill in the fridge for an hour.


For the Cocktail: Muddle pomegranate seeds, add spiced rum, 1 oz Ultima Cherry Pomegranate simple syrup (from Step 1), almond extract, fresh lemon juice, orange juice and shake for 10 seconds with ice. Serve in a holiday glass over ice and and garnish with cherries and/or pomegranate seeds.
