Ultima Spooky Swirl Cookies
BOO! Who goes there? It’s Ultima’s sweet, spooky swirl cookie treats made with gluten-free and sugar-free ingredients. How did we make gluten and sugar disappear you ask? Well, we took some tips from our friendly healthy ghosts and added ingredients like monk fruit, almond flour, plant-based butter and Ultima’s delicious vegan electrolyte powder! Makes 24 cookies
- 1 ½ cups almond flour
- ½ cup coconut flour 🥥
- ¼ tsp. salt
- ¾ cup plant-based butter, softened
- 2 tbsp. monkfruit or erythritol sweetener
- 2 serving Ultima Cherry Pomegranate
- 2 serving Ultima Orange 🍊
- 2 serving Ultima Grape 🍇
Directions: Sift together almond flour, coconut flour, and salt. Set aside.In a medium bowl, cream together plant-based butter and monkfruit or erythritol. Slowly stir in dry ingredients. Mix until combined. Divide cookie dough into three separate bowls. To each bowl, add 2 serving of Ultima - one bowl for each flavor. Roll out each flavor in between two sheets of parchment paper using a rolling pin. Form into a rectangle sheet about ¼ to ½ inch thick. Layer the sheets of colored dough on top of each other and lay down on a sheet of plastic wrap. Starting at one end, tightly roll the dough to form a cylinder tube shape. Refrigerate for 30 minutes or until stiff. Preheat the oven to 350°F degrees. Slice ¼ inch slices off cookies and place about 1 inch apart on a parchment lined baking tray. Put back in the refrigerator for 10 minutes if cookies start to get soft. Bake at 350°F degrees for 8 minutes or until the edges begin to brown slightly. Remove from the oven. Let the cookies cool for 3 to 4 minutes before transferring to a wire rack to finish cooling completely before handling.
