Pink Pomegranate Champagne Cupcakes (Vegan, Low Carb, Keto-Friendly)

Ingredients:

For the Cupcakes:

  • 1 ¾ cup All-purpose flour
  • 1 cup granulated erythritol
  • 1 tbs baking powder
  • ½ tsp Kosher salt
  • 1 serving Ultima Cherry Pomegranate
  • ½ cup unsweetened non-dairy milk
  • ¼ cup vegetable oil
  • ¼ cup unsweetened apple sauce
  • ½ cup your favorite low carb champagne
  • 2 tsp pure vanilla extract

For the Buttercream:

  • 12 oz vegan butter, room temp
  • 10 oz powdered erythritol
  • 2 oz your favorite low-carb champagne
  • 3 servings Ultima Cherry Pomegranate

Directions:

For the Cupcakes: Preheat the oven to 350°F. Line a 12-cup muffin tin with baking cups or grease with vegan cooking spray. In a medium bowl, combine all the dry ingredients. In a separate bowl, combine the wet ingredients. In an even stream, add the wet ingredients to the dry ingredients. Mix until a smooth batter forms. Do not over mix. Fill prepared muffin tin ⅔ full and bake for 20 minutes until a toothpick comes out clean. Allow to cool for 10 minutes in the muffin tin then transfer to a wire cooling rack.

For the Buttercream: In a stand mixer with a paddle attachment, cream vegan butter for 4-5 minutes on high speed scraping periodically with a rubber spatula. Turn off the mixer and slowly add the powdered erythritol. Cover the stand mixer with a kitchen towel to prevent the sugar dust from spreading. On the lowest speed, begin combining the vegan butter and powdered erythritol. Once the mixture is well combined, turn off mixer and scrape down the bowl. Add the champagne and Cherry Pomegranate Ultima and scrape down the bowl again. Turn mixer to high and continue mixing and scraping until the mixture is light and fluffy. Pipe directly onto cupcakes once they have completely cooled.
