Ultima Lemonade Donuts (Gluten-Free, Low-Carb)
We know, we thought the same thing. How is this possible?! A delicious donut made with Ultima Replenisher electrolytes π¦... yes, it is possible!π Using almond flour, monk fruit and coconut oil π₯₯ you can make these gluten-free, lowcarb sweet treats too.
Makes 8 donuts
Ingredients:
For the Donuts:
- 2 cups almond flour
- 1/2 cup unflavored or vanilla vegan protein powder
- 2 tbsp monkfruit or erythritol sweetener
- 2 1/2 tsp baking powder
- 2 tsp xanthan gum
- 1 tsp salt
- 1/2 cup coconut oil, melted
- 1/4 cup vegan, non-dairy yogurt
- 1/4 cup hot water
For the Lemonade Glaze:
- 1 serving Ultima Replenisher Lemonade electrolyte powder
- 1 serving Ultima Replenisher Pink Lemonade electrolyte powder
- 1/2 cup powdered erythritol
- 3 tbsp coconut milk
Directions:
Preheat oven to 325Β°F. Spray a donut pan with cooking oil. Add all the dry ingredients for the donuts to a medium bowl. Mix until combined and then mix in the wet ingredients. Grab a handful of dough and press it into a donut pan. Add enough dough to reach almost the top of the rim. Bake for 10 minutes or until the donuts are set and lightly brown around the edges. Let cool completely in the donut baking tray then transfer to a wire rack.
To make the glaze, add ΒΌ cup powdered erythritol, 1 1/2 tablespoons coconut milk and one scoop Ultima Lemonade to a small bowl. In a separate bowl, add remaining powdered erythritol, coconut milk and one scoop Ultima Pink Lemonade. Microwave for 20 seconds to get a thin consistency. Dip the top of your donut into desired glaze and place on a wire rack to set.
